Spinach & Goat Cheese Dip

Both my husband and I enjoy warm, melted cheese in all varieties.  From the stretchy nature of mozzarella to the lush creaminess to brie to the delightful silkiness of a gruyére fondue, we adore cheese in its molten form.

Blackberry Bruschetta

We are fortunate to have wild blackberry bushes in our backyard.  However, most summers there aren't that many berries on the plants.  In fact, there usually are only enough for the kids to pick and eat.  Of course, I'm not going to complain about kids thinking that blackberries are a special treat.

Zucchini is one of those vegetables that I wish was available locally all year long.  Sadly, its stay is much shorter than that, and it is a vegetable that doesn't freeze well whole.  So, while zucchini is available I like to cook with it frequently.

Although I am not a vegetarian, I am a huge fan of produce.  Some of my favorite meals are based around fruits and vegetables.  So, this time of year is quite exciting for me.  After a long winter and spring with almost no freshly picked produce, it is a delight to visit our local farm stands.  This past weekend I was pleased to find five different types of lettuce, radishes, peas, and much more.  My husband and I purchased a variety of veggies to use in our meals for the next few days.

Benedictine Dip

My husband loves watching the Kentucky Derby.  In fact, I think it is one of his favorite sporting events of the year.  Horse racing is a newer to me sport, but enjoyable nonetheless.  We have celebrated this event at home and at the racetrack.  This year, we had a high school track meet to attend that would take a good portion of the day, so we decided to watch the races at home.  A benefit of staying home is the ability to utilize our culinary creativity.
