Mom’s Wonderful Homemade Waffles

I recently decided to go deep into the Think Tasty archives and found this recipe from 2007. There is nothing wrong with the recipe, but the post accompanying it? As you will see, further down the page, it’s about as short as can be. However, I imagine my world was busy at that point. I was teaching at the elementary level. Two families were blending into one. There were rides to practices and games. The list goes on.

My new thoughts on the recipe

No matter busy life was (or is), there almost always is time to make homemade waffles. You can whisk the batter together in five minutes. The first waffle will be out of the waffle maker in less than five minutes after that. Deliver to the first diner, and you’re onto waffle number two.

If you’re in a hurry or have a hungry group, serve them one at a time. However, if you want to serve these waffles all at once, you need to store them correctly. Preheat your oven to 225. Place each cooked waffle directly on the oven rack. Do NOT put them on a baking sheet. Placing them on the rack keeps the outside exposed to air, keeping it crispy. (That’s the goal- crispy outside, tender inside.)

Get your toppings ready. I’m a purist with butter and maple syrup (pancake syrup in a pinch). Grab the chocolate chips, sliced strawberries, whipped cream, or anything else you please. Let breakfast happiness begin!

Recently, I reviewed my Toastmaster Belgian Waffle Maker.  I received a comment to that posting requesting my waffle recipe.  Here is the recipe that I have used for countless morning meals.

Mom’s Wonderful Waffles

Ingredients
  1. 2 cups all-purpose flour
  2. 3 tablespoons sugar
  3. 1 tablespoon baking powder
  4. 1/4 teaspoon salt
  5. 2 cups milk (I use skim)
  6. 2 eggs
  7. 3 tablespoons unsalted butter, melted
  8. 1 teaspoon vanilla
Instructions
  1. Heat waffle maker, per owner’s manual.
  2. In an 8-cup measuring cup, combine flour, sugar, baking powder, and salt.
  3. In a 4-cup measuring cup, whisk together milk, eggs, cooled melted butter, and vanilla.
  4. Make a well in the dry ingredients and add the wet ingredients.
  5. Stir until just moistened. (Batter will be lumpy.)
  6. Pour batter into lightly greased waffle maker, and bake according to manufacturer’s instructions. When waffle is ready, serve immediately. (Waffles lose their crunchiness if stacked while waiting to serve.)
  7. Top with butter and syrup, chocolate chips, or fresh strawberries or kiwi fruit and whipped cream.
Notes
  1. Makes 6-8 waffles, depending on the size of your waffle maker.
