This week we’re all about those that are easy to prepare and are pleasing to the palate. That’s where our friends at York Harbor Inn in York Harbor, ME come in handy with their delectable Warm Artichoke Dip. Foodies favor this Maine inn for its “1637 Restaurant” with ocean views, historic intimate dining rooms, and lively Tavern Bar and Tap Room all centered around a large fieldstone fireplace, as well as the Ship’s Cellar Pub down below with its one-of-a-kind atmosphere of nautical-themed decor and construction. Guests also appreciate the luxurious accommodations, numerous amenities, and the ideal oceanfront location.

Warm Artichoke Dip

Ingredients
  1. 1 14-oz. can artichoke hearts, drained and large diced
  2. 12 oz. cream cheese
  3. 1/4 cup red peppers, finely diced
  4. 2 Tb. onions, finely diced
  5. 2 Tb. white wine
  6. 1/2 Tb. dijon mustard
  7. 3/4 tsp. paprika
  8. 1/2 tsp. garlic, minced
  9. 3/4 tsp. salt
  10. 1/2 tsp. white pepper
  11. 1 Tb. fresh lemon juice
  12. 3/4 cup fine bread crumbs, unseasoned
  13. 1/4 cup butter, melted
Instructions
  1. Combine cream cheese, red peppers, onion, white wine, Dijon mustard, paprika, garlic, salt, white pepper, and lemon juice in a food processor with steel blade.
  2. Process to mix well.
  3. Remove mixture from food processor and place in a mixing bowl.
  4. Add diced artichoke hearts and blend.
  5. Place artichoke dip into a 1 qt casserole dish.
  6. Top with buttered crumbs.
  7. Bake in a 350′ oven approximately 20 minutes, or until top is lightly browned and the dip is bubbly around the edges.
  8. Serve immediately with warm French bread.
Notes
  1. This dip can be prepared ahead of time and refrigerated for 3 days. Top with crumbs before heating. You may add crabmeat or cooked, diced chicken. You can also serve with a salad for a light luncheon.
