It’s an appetizing ingredient to any recipe, just ask our friends at 1859 Historic National Hotel in Jamestown, CA. At their gourmet restaurant onsite, one of the most in-demand dishes is their Butternut Squash Soup. Celebrating 40-plus years of dining excellence, this hotel is a popular spot showcasing Mediterranean cuisine and an award-winning wine list. They also have a full-service bar featuring specialty drinks, delectable homemade desserts, and offer exceptional hospitality services. Coffee is ground fresh daily in their antique coffee mill; breads and rolls are baked fresh daily; and the hotel grows most of its own herbs and some of their vegetables, too. When available, they buy local produce as well. There are menus available for dinner, lunch, brunch and children. Guests of the hotel also enjoy a delicious complimentary buffet breakfast in the main dining room each morning.

Ingredients
  1. 6 large squash peeled, diced, and seeded
  2. 4 jumbo carrots, peeled and diced
  3. 3 large onions, peeled and diced
  4. 1 stalk celery, diced
  5. 3 gallons of water
  6. 2 Tb. brown sugar
  7. 1 Tb. cinnamon
  8. 1 Tb. nutmeg
  9. Salt and pepper to taste
Instructions
  1. Boil all ingredients until soft about 40 minutes.
  2. Puree in blender by batches.
  3. Heat back up to temperature.
  4. Garnish with a drizzle of diluted sour cream.
