This soup recipe by The Inn at English Meadows uses simple ingredients that you can easily find at your local grocery store. Though the soup itself only takes 20 minutes to cook aside from parboiling and peeling the cherry tomatoes, you will have to plan ahead to marinate the cod or hake for up to four hours before cooking. The marinade is also added to the soup, which makes a delicious broth. Serve with crusty bread and a garden salad for a hearty meal.

 

Miracle Fish Soup

Ingredients
  1. 2 pounds cod or hake
  2. Juice of two limes (at least)
  3. 1 teaspoon (at least) red pepper flakes
  4. 4 cloves (at least) garlic roughly chopped
  5. 1 1/2 pounds Cherry tomatoes (parboiled and peeled)
  6. 1 large onion roughly chopped
  7. 1 red bell pepper and 1 yellow bell pepper, somewhat peeled and roughly chopped
  8. 2 cans Cannellini beans
  9. 1 cup chopped cilantro
  10. 1/2 cup chopped parsley
  11. 1/2 cup good olive oil
Instructions
  1. Marinate the fish in Olive oil, lime juice, garlic and red pepper flakes for at least an hour and
  2. up to 4 hours.
  3. Put tomatoes in the bottom of a cold pot. Add onions, peppers and beans. Add Fish and pour
  4. marinade into pot.
  5. Bring to a boil and then simmer 20 minutes, until vegetables have softened and released
  6. their juices and fish is barely cooked through (about 20 minutes).
  7. Stir in herbs and serve with crusty bread and green salad.
