Chocolate & Peanut Butter Krispie Treats

Why eat plain Krispie Treats when you can have even more excitement?

Ingredients

  

  • 10 oz. bag marshmallows
  • 4 Tb. butter
  • 2/3 cup creamy peanut butter
  • 6 cups Rice Krispies
  • 2 cups chocolate chips

Instructions

 

  • Spray a 13″x9″ pan, sides and bottom, with nonstick cooking spray.
  • Combine marshmallows and butter in a large pot over medium heat.
  • Stir frequently until both are melted and combined.
  • Remove from heat and add peanut butter, mixing well
  • Add Rice Krispies, stirring until fully incorporated.
  • Add chocolate chips, mixing well.
  • Transfer to prepared pan, spreading evenly
  • Allow to cool for 15 minutes.

Ah, krispie treats! How many last minute dessert requests did you fill when the kids were younger?  Since that time, you’ve been less frequently seen in our home, until I made this recipe a couple years ago. One of the reasons for the infrequency may be the Rice Krispies themselves. What does everyone else do with the leftover Rice Krispies? As a cereal, they get soggy ridiculously fast and aren’t very filling. When I made krispie treats more often, I usually just made two batches in short time to use all of the Rice Krispies. Now? I’m not really sure. Either way, it might be worth the pondering to make a batch of these; they’re all sorts of delicious worthy of the leftovers conundrum.

For me, cooking for other people is one of my preferred ways to show that I care. Whether I’m invited to your house, am hosting you, or have a meeting, I like to share my cooking as a sign of caring/friendship/what have you. I’ve been doing this since I was a teenager, often bringing a batch of cookies when spending time with friends.
As a parent, I’ve marked special occasions for my kids with homemade items, whether it be a special dinner, after school snack, or breakfast. With both kids in college, there are fewer times to cook for them. Since they aren’t home as often, I’ve worked on finding more items that can ship well and have a longer shelf life.

Adding in the heat of summer, I was dubious as to how a package of homemade cookies would do in transit. Nothing worse than getting cookies almost a week after baking to discover they’re stale. I decided to work with a treat that doesn’t change texture after a few days- krispie treats. Rather than going with the same old recipe, I decided to add some different flavors.

Peanut butter and chocolate are a favorite pairing in our house with a little tweak, of course. My daughter prefers semi-sweet, and my son prefers milk chocolate. Were I to make only one version, they wouldn’t balk and would gladly eat their share. But when I have the time, I simply make a half batch for each.

These Chocolate Peanut Butter Krispie Treats can be made with either type of chocolate. I’d guess you even could make them with white chocolate, although it sounds dauntingly sweet to me. Choose the chocolate that works for your palate and make a batch. They’re sure to please!
