This week has been focused on butternut squash, an ingredient with whom I’ve had a long adoration. In the fall and winter, I would guess that I eat butternut squash at least two to three times a week, whether it be in my lunch or as part of dinner. I truly never tire of it. To convince others that this squash is amazing I have four more ways to turn it into a lunch or dinner dish.

Savory Butternut Squash & Spinach Soup– Butternut squash, in my opinion, was meant to be a soup ingredient. It easily transform into a thick and creamy base that is healthy and tasty. Add some spinach and spices for extra texture and flavors.

Butternut Squash Chili– If you’re looking for a vegetarian chili recipe that is hearty and full of vegetables, this is what you want. Who needs faux meat cubes when you can have butternut squash to add body to your chili.

Brûléed Butternut Squash– This was the way I convinced my kids that butternut squash wasn’t their evil enemy. Yes, I did bribe them with sugar, but if you’re getting a big scoop of squash and a sprinkle of sugar, does it really matter?

Slightly Sweet Butternut Squash Soup– Start with soup, end with soup. However, these two recipes are quite opposite. While this soup isn’t sweet enough to be a dessert, it definitely has hints of sweetness from the dried cranberries. Serve it with a grilled cheese sandwich, and you have a delightfully balanced meal.
