We are almost at the midpoint of June, and summer is beckoning. This pineapple dish would make a lovely dessert to end a hot day. Alternately, it would make a fine dish as part of a brunch menu. Actually, the more I type, the more ways I think to serve, so I’m hoping you get the point. Make. This. Recipe.

Pineapple has long been a fruit I’ve enjoyed. Although if I consider that statement, I don’t think there have been many fruits that I disliked. Handheld, sweet treats- what’s not to like?

Back to my original statement. Pineapple is a fruit I’ve long adored. However, in my childhood that fruit almost always came in a can. Sometimes it was chunks, other times it was rings. If used in a recipe, it may have been crushed. Rarely, if ever, did an entire, fresh pineapple appear in my childhood kitchen.

Now, I’m not going to knock canned pineapple. It can be bought in juice, so it isn’t sickeningly sweet. It works in a number of recipes. It’s a nice, quick way to get some pineapple and has pretty decent flavor.

BUT once you try freshly sliced pineapple, it opens your eyes to the world of flavor. A fully ripened pineapple has so much more sweetness, texture, and flavor than canned pineapple, it will astound you.

Of course, it is more expensive to buy a whole pineapple. Although if you keep a watchful eye in the produce department, you should notice that they go on sale. Then they really don’t cost much more than a couple cans of pineapple. If it’s in your budget, it is worth the extra dollar or two, just for the flavor alone.

Once you have this beautiful pineapple in your kitchen, I recommend this recipe. Because the recipe is so simple, the pineapple shines. It truly is the star of the dish that is allowed to shine even more brightly due to its co-star ingredients.

Broiled Pineapple with Yogurt & Macadamia Nuts

Ingredients

  

  • 1 whole pineapple
  • 2 tablespoons spiced rum optional
  • 1 tablespoon sugar
  • 5.3 ounces vanilla yogurt
  • 1/4 cup chopped salted macadamia nuts

Instructions

 

  • Cut the pineapple into quarters lengthwise.
  • Save half of the pineapple for another recipe.
  • Remove core from the other two quarters.
  • Cut remaining quarters in half lengthwise, and remove the rind from each.
  • Cut each section in half lengthwise again, so that you have 8 long sections.
  • Place in a rimmed dish and pour rum over slices, if using.
  • Allow to sit for 30 minutes.
  • Preheat oven to 400°.
  • Place slices on a greased, rimmed baking sheet, and bake for 5 minutes.
  • Remove sheet from oven, and switch oven to broil.
  • Move rack to highest position.
  • Sprinkle sugar over the pineapple sections.
  • Place under broiler for 2-3 minutes.
  • Allow pineapple to cool for a minute or two, and then cut each segment into 7 or 8 cubes.
  • Arrange cubes in a circle on a small plate.
  • Place two tablespoons of yogurt in the middle of the circle.
  • Sprinkle with macadamia nuts.
  • Eat immediately; it’s best when the pineapple is warm.
