Asparagus Wrapped in Pancetta

This simple three ingredient recipe will not only become a favorite dish, but it is one that you will come back to again and again. You can make it on the stove in the winter months, and also make it on the grill in the summer.

Asparagus Wrapped in Pancetta

Ingredients
  1. 8 slices Pancetta, very thin
  2. 24 stems fresh asparagus
  3. pinch salt
Instructions
  1. In a flat sauté pan bring 2 cups of water to a boil
  2. Snap the woody ends off of the asparagus. They will naturally break where the tender part starts
  3. Drop the asparagus into the boiling water several stems at a time just 30 seconds until they turn bright green.
  4. Carefully remove them with a slotted spoon or kitchen tongs. Allow to cool slightly
  5. Wrap one slice of pancetta around 3 stems of asparagus
  6. Brush tips with olive oil
  7. Heat the grill. Place on the grill turning often till the pancetta is crisped
