Ingredients
1-1/2
cups
all-purpose flour
plus additional
3/4
cup
warm water
1
teaspoon
granulated sugar
1-1/4
teaspoons
active dry yeast
1
teaspoon
kosher salt
1
tablespoon
olive oil
plus more for greasing
1/2
tablespoon
dried oregano
1/2
tablespoon
dried basil
Salt & pepper
Instructions
Combine flour, water, sugar, yeast and teaspoon salt in the bowl of a stand mixer.
Mix on speed 2 until combined.
Add extra flour, a couple tablespoons at a time, until dough clings to the hook.
Knead for an additional 4 minutes on speed 2.
Remove dough from bowl, grease sides of bowl with olive oil.
Return dough to bowl, and flip to coat with olive oil.
Cover bowl with plastic wrap, and place in a warm spot to rise for an hour.
Preheat oven to 350 degrees.
Grease quarter-sheet pan with olive oil.
Transfer dough to pan, and stretch to cover bottom of the pan.
Using fingers, make indents into top of the dough.
Top with 1 tablespoon olive oil, sprinkle with herbs, salt, and pepper.
Bake for 25-35 minutes or until the bottom is golden brown.
Notes
Fresh herbs can be used in place of dried. However, you will need to increase the amount from 1/2 tablespoon to 2 tablespoons for each.
