Choose Your Own Herbed Focaccia

Ingredients
  

  • 1-1/2 cups all-purpose flour plus additional
  • 3/4 cup warm water
  • 1 teaspoon granulated sugar
  • 1-1/4 teaspoons active dry yeast
  • 1 teaspoon kosher salt
  • 1 tablespoon olive oil plus more for greasing
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon dried basil
  • Salt & pepper

Instructions
 

  • Combine flour, water, sugar, yeast and teaspoon salt in the bowl of a stand mixer.
  • Mix on speed 2 until combined.
  • Add extra flour, a couple tablespoons at a time, until dough clings to the hook.
  • Knead for an additional 4 minutes on speed 2.
  • Remove dough from bowl, grease sides of bowl with olive oil.
  • Return dough to bowl, and flip to coat with olive oil.
  • Cover bowl with plastic wrap, and place in a warm spot to rise for an hour.
  • Preheat oven to 350 degrees.
  • Grease quarter-sheet pan with olive oil.
  • Transfer dough to pan, and stretch to cover bottom of the pan.
  • Using fingers, make indents into top of the dough.
  • Top with 1 tablespoon olive oil, sprinkle with herbs, salt, and pepper.
  • Bake for 25-35 minutes or until the bottom is golden brown.

Notes

Fresh herbs can be used in place of dried. However, you will need to increase the amount from 1/2 tablespoon to 2 tablespoons for each.
