Fried (Leftover) Rice

Ingredients
  

  • olive oil
  • 1/4 cup diced carrots
  • 1 cup cooked rice
  • 1/4 cup frozen corn defrosted
  • 1/4 cup frozen peas defrosted
  • 1/3 cup cooked pork diced
  • 1-1/2 tsp. soy sauce
  • 1/2 tsp. sesame oil
  • 1/2 tsp. garlic powder

Instructions
 

  • Heat a small amount of olive oil in a large nonstick pan over medium heat.
  • Add carrots, and cook for 5 minutes, or until tender.
  • Add rice, stirring occasionally, for 2 minutes.
  • Add corn, peas, pork, soy sauce, sesame oil, and garlic powder, cooking and stirring for 2-3 minutes.
  • Serve immediately.
