Fried (Leftover) Rice

- olive oil
- 1/4 cup diced carrots
- 1 cup cooked rice
- 1/4 cup frozen corn defrosted
- 1/4 cup frozen peas defrosted
- 1/3 cup cooked pork diced
- 1-1/2 tsp. soy sauce
- 1/2 tsp. sesame oil
- 1/2 tsp. garlic powder
Heat a small amount of olive oil in a large nonstick pan over medium heat.
Add carrots, and cook for 5 minutes, or until tender.
Add rice, stirring occasionally, for 2 minutes.
Add corn, peas, pork, soy sauce, sesame oil, and garlic powder, cooking and stirring for 2-3 minutes.
Serve immediately.
