Irresistible Onion-Filled Goat Cheese Spread

Ingredients
  

  • 1 tablespoon olive oil
  • 2 cups thinly sliced red onion
  • 2 tablespoons light brown sugar
  • 3/8 cup dry red wine
  • 2 tablespoons sherry vinegar
  • 1/2 tablespoon honey
  • 1 sprig rosemary
  • salt & pepper to taste
  • 2 ounces goat cheese room temperature
  • crostini crackers, etc.

Instructions
 

  • In a small saucepan, heat the olive oil over medium heat.
  • Cook the onion until it becomes soft and translucent and starts to brown, about 10 minutes.
  • Add the brown sugar, wine, vinegar, honey, and rosemary; bring to a boil and then reduce the heat.
  • Simmer for 30-35 minutes until thickened.
  • Remove from heat.
  • Discard rosemary sprig and season with salt and pepper.
  • Add goat cheese and stir until fully combined.
  • Serve with crostini, crackers, or the item of your choice.
