Broccoli "Meat"balls

  • 3 cups broccoli florets
  • 3/4 cup fresh breadcrumbs
  • 1 egg white
  • 2 garlic cloves, minced
  • salt & pepper
  • 1/2 cup shredded cheddar cheese


  • Preheat oven to 400.
  • Steam broccoli until fork tender.
  • Allow broccoli to cool slightly, then purée in a blender or food processor.
  • Combine puréed broccoli and all remaining ingredients in a large bowl.
  • Form broccoli mixture into balls about the size of a walnut.
  • Transfer broccoli balls to a baking sheet that has been coated with nonstick cooking spray.
  • Bake for 22 minutes.
