Cheese & Herb Stuffed Tomatoes

- 6 plum tomatoes
- Olive oil
- 4 oz. goat cheese softened
- 8 fresh basil leaves minced
- Artisanal balsamic vinegar optional
Preheat oven to 325
Slice tomatoes in half widthwise; remove seeds and pulp
Drizzle olive oil on tomatoes, rub to coat inside and out.
Place tomatoes cut side up in muffin pan.
Sprinkle each with a small amount of salt
Roast for 15 minutes
While roasting, combine goat cheese and basil.
After 15 minutes, divide goat cheese evenly among tomatoes.
Cook for an additional 10 minutes.
Drizzle with balsamic vinegar, if desired.
