Tastes Like Spring Pea Soup

Ingredients
  

  • 1 Tb. olive oil
  • ½ medium sweet onion diced
  • 14.5 oz. can vegetable broth
  • 1-½ cups frozen peas thawed
  • 1 cup frozen spinach thawed and squeezed dry
  • 1 Tb. lemon juice
  • ¼ cup Greek yogurt

Instructions
 

  • Heat olive oil in medium saucepot. Add onion and saute until tender.
  • Add defrosted peas and broth.
  • Bring to a boil, then reduce to a simmer, cooking for about 2 minutes.
  • Add spinach, stirring well.
  • Cool slightly and puree in a blender.
  • Return to saucepot, add lemon juice, and warm over low heat.
  • Season with salt and pepper to taste.
  • Divide between two serving bowls
  • Top with a dollop of Greek yogurt.
  • Serve warm.
