Beef and Blueberries

by TT August 6th, 2012| Appetizers, Main Dishes, Recipes, Tapas Monday
My husband and I spent part of a weekend in Boston recently.  After scheduling a day of work meetings in the city, we decided to make it into a combination work/pleasure trip by spending the night and next day nibbling and adventuring through Boston.  After a round of post-work drinks at Dillon's, we headed over to Newbury Street for dinner at Tapeo.  We had been there previously for an afternoon snack and drink and were looking forward to a meal of tapas dishes.  Although the atmosphere was mediocre, the food was excellent.  One of our favorite dishes was Pato

Zucchini Parmesan

by TT July 23rd, 2012| Appetizers, Main Dishes, Recipes, Tapas Monday
My husband has been talking about eggplant parmesan quite frequently.  While eggplant is an ingredient that I incorporate into our Tapas Monday on a semi-regular basis, I don't make eggplant parmesan all that often.  If I do, I usually cook it with little oil and breading.  However, I knew that he was thinking of the breaded and fried version.

After a busy week, we planned to have a quiet Sunday at home.  With nothing but a few work projects on our schedules, I decided to make a mid-afternoon meal that could be enjoyed while watching a movie and relaxing.  My

Boqueria Flatiron, New York, NY

by TT June 25th, 2012| Restaurant Reviews
Summer has returned, and with it, so has my increase in business travel.  With a little bit of coordination, my husband and I usually are able to schedule our business travels so that they align for the same dates in the same city.  Last week was our first week of such travels, which we started with meetings in New York City.  There are many wonderful things about traveling to NYC, but one of my favorite features is the wide array of restaurants available- all open late into the night.

As our travel had us in New York on a Monday

Leek & Goat Cheese Mini-Tarts

by TT March 29th, 2012| Appetizers, Tapas Monday
Although the sources of inspiration for my cooking may vary, I think the inspiration for this dish was unique.  Over the weekend I made lobster newburg for my husband's birthday.  As this was a dish I'd never made, I reviewed many recipes, seeking what seemed like the perfect combination of ingredients.  In the end I debated between two recipes, finally choosing one that utilized a roux.

After our dinner on Sunday evening, our 15 year old asked why we had leeks in the refrigerator.  I then realized that while shopping I had purchased all of the ingredients for the recipe

Maple Apple Mustard

by TT March 15th, 2012| Spreads & Sauces
I know I've written about it many times, but I thoroughly adore Tapas Mondays.  Even though it means not eating dinner until after 9:00, it is such a wonderful way to start the workweek.  The kids are in bed, working on homework, or entertaining themselves on a different floor of the house.  The dining room is lit by candles, and my husband and I sit down to a delicious dinner and some prosecco.

Many of these nights involve a fair amount of cooking.  While the kids eat their dinner, I am working on that night's menu.  However, sometimes there are

Apple Skins

by TT November 30th, 2011| Appetizers, Recipes
The season of eating has descended.  For us, it started on the Saturday before Thanksgiving, which is when we held our big family celebration.  We had a dinner filled with many of the usual dishes: roast turkey, mashed potatoes, cornbread stuffing, and cranberry sauce.  After several days of using the leftovers in various creative ways, we knew we would not be in the mood for more turkey on the actual holiday.

With only two of our four children with us for Thanksgiving Day, we decided to try something different and created our own Iron Chef competition.  The details were simple: each

Spinach & Goat Cheese Dip

by TT September 5th, 2011| Appetizers, Recipes, Tapas Monday
Both my husband and I enjoy warm, melted cheese in all varieties.  From the stretchy nature of mozzarella to the lush creaminess to brie to the delightful silkiness of a gruyére fondue, we adore cheese in its molten form.

Last week I knew I had a small log of goat cheese hanging out in our refrigerator.  While it would have been a great topping for salad or a filling for a wrap, it seemed to be begging me to find a way to use it in a warm cheese creation.  So, with the goat cheese's request falling on a Tapas Monday,

Sausage Stuffed Zucchini

by TT August 16th, 2011| Healthy Cooking, Main Dishes, Recipes, Side Dishes, Tapas Monday
Zucchini is one of those vegetables that seems destined for filling with ingredients.  Growing up, my mom frequently stuffed zucchini with spinach, which made a delicious dish that could be served as an entrée or side.  This spring I created a tomato-stuffed zucchini topped with mozzarella.  As both of those are vegetarian dishes, it seemed to be time to create something for the carniverous crowd.

I made this dish as part of last night's Tapas Monday menu.  Served with crostini topped with tomatoes from our garden and fresh mozzarella, it made for a wonderful dinner of nibbling.  The only negative

Artichoke Salad

by TT August 4th, 2011| Recipes, Salads, Tapas Monday
On a recent Tapas Monday, I lacked creativity.  I had a meeting near a great Italian specialty shop, so I decided to seek inspiration there.  As I knew would happen, I wasn't disappointed.  I found more cheeses than one would need for a dinner for two, assorted cured meats, and interesting crackers.  However, cheese, charcuterie, and crackers don't necessarily make enough of a meal, at least when your dinner companion is a man with a hearty appetite.

As I was checking out their olives, I noticed that they also had roasted tomatoes in extra virgin olive oil.  While I normally would

Zucchini Fries

by TT July 21st, 2011| Appetizers, Recipes, Side Dishes
Zucchini is one of those vegetables that I wish was available locally all year long.  Sadly, its stay is much shorter than that, and it is a vegetable that doesn't freeze well whole.  So, while zucchini is available I like to cook with it frequently.

I have served zucchini in numerous forms:  zucchini cakes (both as a savory appetizer and as a sweet dessert), grilled zucchini, mashed zucchini, and stuffed zucchini.  That is just the beginning of the list.  One item that I had not made previous to last week's Tapas Monday was Zucchini Fries.  However, it seemed like the perfect

Summer Squash & Zucchini Bruschetta

by TT June 29th, 2011| Appetizers, Recipes, Tapas Monday
Although I am not a vegetarian, I am a huge fan of produce.  Some of my favorite meals are based around fruits and vegetables.  So, this time of year is quite exciting for me.  After a long winter and spring with almost no freshly picked produce, it is a delight to visit our local farm stands.  This past weekend I was pleased to find five different types of lettuce, radishes, peas, and much more.  My husband and I purchased a variety of veggies to use in our meals for the next few days.

Two summer favorites of ours are summer squash

Mini Mushroom Tarts

by TT May 4th, 2011| Appetizers, Recipes, Tapas Monday
For this week's Tapas Monday I knew that I would be braising short ribs.  Although I could have made a gourmet dinner of short ribs and sides, I wanted to stick with the regular tapas format.  Some roasted broccoli was the second dish to come to mind, so I needed one more dish to round out the menu.  After a weekend of splurging:  carrot cake, espinaca, and a hearty Sunday breakfast, I didn't want anything heavy.

With one meat dish and one veggie dish, it would have been easy to turn to a bread for the third.  However, that would have
