Beef and Blueberries

Zucchini Parmesan

My husband has been talking about eggplant parmesan quite frequently.  While eggplant is an ingredient that I incorporate into our Tapas Monday on a semi-regular basis, I don't make eggplant parmesan all that often.  If I do, I usually cook it with little oil and breading.  However, I knew that he was thinking of the breaded and fried version.

Summer has returned, and with it, so has my increase in business travel.  With a little bit of coordination, my husband and I usually are able to schedule our business travels so that they align for the same dates in the same city.  Last week was our first week of such travels, which we started with meetings in New York City.  There are many wonderful things about traveling to NYC, but one of my favorite features is the wide array of restaurants available- all open late into the night.

Leek & Goat Cheese Mini-Tarts

Although the sources of inspiration for my cooking may vary, I think the inspiration for this dish was unique.  Over the weekend I made lobster newburg for my husband's birthday.  As this was a dish I'd never made, I reviewed many recipes, seeking what seemed like the perfect combination of ingredients.  In the end I debated between two recipes, finally choosing one that utilized a roux.

Maple Apple Mustard

I know I've written about it many times, but I thoroughly adore Tapas Mondays.  Even though it means not eating dinner until after 9:00, it is such a wonderful way to start the workweek.  The kids are in bed, working on homework, or entertaining themselves on a different floor of the house.  The dining room is lit by candles, and my husband and I sit down to a delicious dinner and some prosecco.
