Chicken Florentine

by TT February 16th, 2009 | Main Dishes, Recipes
On a recent Saturday, the kids were tired from a late Friday night.  So, rather than eating dinner together, we made an early kid dinner and put them to bed a little before 8.  After they went to bed, we had a nice quiet, candlelit dinner for two.

As chicken and spinach were our dinner ingredients, they worked well for both meals.  The kids were pleased to have grilled chicken breasts and a "no thank you" serving of spinach.  (In our house, that is a petite serving, enough so that you are sampling but not enough to feel torturous for the

Mexican Soup

by TT February 11th, 2009 | Healthy Cooking, Main Dishes, Recipes, Soups & Stews
With soup typically served once a week during the cool months, it is easy to become bored with this dish.  However, to reduce repetition, a different family member gets to choose the soup each week.  With several different taste preferences, this helps to encourage creativity and new flavors.

This week, our 12 year old was tasked with choosing our soup.  He started to fall back upon one of his favorites, corn chowder.  However, I have made that soup already this winter and wanted him to think a little more.  To help him with his decision, I told him to choose an

Taste of Hawaii Chicken Salad

by TT February 3rd, 2009 | Recipes, Salads, Sandwiches
Winter continues in New Hampshire.   As I write this post, I am watching both snowflakes and temperature drop.  With multiple snowstorms and ice storms already occurring, winter feels long this year.

Last week I decided to bring a tropical feel to our house via dinner.  Having bought a

Apple-Chicken Salad

by TT September 17th, 2008 | Recipes, Salads
Just last week I wrote about the arrival of chilly fall days and making soup.  It may come of no surprise to my fellow New Englanders, but a day or two after that, we had very warm weather.  In this part of the country, you need to have a big bureau with room for both cold and warm weather clothes, as you never know what the day will bring!

So, as the temperature was set to rise to 80, it was no longer soup and homemade bread weather.  The warmth and humidity lent themselves to a salad dinner.  I adore almost

Blueberry Salsa-Topped Chicken

by TT July 10th, 2008 | Healthy Cooking, Main Dishes, Recipes
Looking for an interesting Saturday night dinner, we decided to try a dish that had fruit included.  Although native blueberries weren't quite ready, we knew we would be shopping at Whole Foods and decided that we would be able to find some decent produce there.

So, this past Saturday, with just us two adults in attendance, we embarked on the 35 minute drive to the nearest Whole Foods.  Knowing that we would have an afternoon of shopping, we packed a cooler in hopes of finding interesting foods that would need to be kept chilled.

We were not disappointed.  We found 3 varieties
