Peeps-Rice-Krispies-lo-res-sigHere’s a special Easter-themed treat that’s quick and easy enough to make with your kids. Remember to put the marshmallow chicks, bunnies or whatever in the freezer the night before — no, you won’ t be melting them down to hold the Rice Krispie squares together. And they’ll need to be firm to keep standing up in a pan of hot melted marshmallows. This recipe comes from the Big Mill Bed and Breakfast in Williamston, North Carolina, known not only for its great food and comfort, but for its peaceful setting with 200 acres to explore. Rice Krispies Treats with PEEPS

Ingredients
  1. 4 Tablespoons butter
  2. 10 oz. pkg. Marshmallows (about 40) or 4 cups miniature marshmallows
  3. 6 cups Rice Krispies cereal
  4. 12 PEEPS
  5. Optional: 1 Tablespoon marshmallow cream for glue
Instructions
  1. Freeze PEEPS overnight.
  2. Grease a 9″ x 13″ baking pan or dish and set aside. In a large saucepan, melt 3 tablespoons butter over low heat. In a small pan melt remaining 1 tablespoon butter (this is your glue) or you can use marshmallow cream.
  3. Add marshmallows to the large pan and stir until melted. Add Rice Krispies and stir until coated. Remove from heat. Using a greased spatula, press the marshmallow-Rice Krispie mixture into the greased pan. It is really

  5. Press the frozen PEEPS on top, spacing each PEEP about 1 1/2″ apart. Allow to cool and cut into 12 squares with PEEPS in the middle. Best served the same day.
