Absolutely the World’s Best Egg Casserole…Ever! is one great example from our friends at Christopher’s Bed & Breakfast in Bellevue, KY, a beautiful B&B housed in a 19th-century former church that shines with jewel-toned stain-glassed windows, three Jacuzzi suites, and of course, great morning meals. Continental plus breakfasts are served on the weekdays, and the weekend breakfast includes this signature specialty below.

Absolutely the World’s Best Egg Casserole…Ever!

Ingredients
  1. 12 eggs
  2. 1 cup plain yogurt
  3. 1 tsp. Lawry’s seasoned salt (or, to taste)
  4. ¾ stick butter or margarine
  5. 2 cups shredded hash brown potatoes (thawed)
  6. ¼ cup (or less) chopped onion
  7. 1 cup grated sharp cheddar cheese
Instructions
  1. Preheat oven to 350°.
  2. Spray or grease a two-quart casserole dish with cooking oil.
  3. Beat eggs, yogurt, and salt together.
  4. Melt butter and lightly sauté onion.
  5. Add thawed potatoes. Stir to mix.
  6. Pour in egg mixture and lightly stir to blend ingredients.
  7. Pour into casserole dish. Sprinkle grated cheese over casserole.
  8. Bake at 350° for approximately 30 minutes or until knife comes out clean when inserted.
  9. Cut into 8 squares.
Notes
  1. If preparing the night before, extend cooking time to 45 minutes. This recipe was adapted from Arrington B&B Journal and Cats Cradle B&B.
