Pecan Pie Bars

PecanPieBars_BarnInnBBThis week’s recipe puts all the taste of pecan pie into a cookie. (Which is great if you ever get a longing for pecan pie, as I do, having lived in Texas. It’s also great if you don’t want all the sugar and calories of a whole piece of pie, as I don’t.) Coming from the Barn Inn in Millersburg,  in Ohio’s Amish country, these bars combine a rich bottom layer with a simple, but delicious, traditional topping of pecans, brown sugar, and corn syrup. If your family likes nuts, these will be great for snacks or school lunches.


Pecan Pie Bars


  1. 3 cups flour
  2. 4 Tbsp. brown sugar
  3. 1 cup butter
  4. 6 eggs
  5. 1 1/2 cups light corn syrup
  6. 1 1/2 cups brown sugar
  7. 2 cups chopped pecans
  8. 6 Tbsp. butter, melted
  9. 1 Tbsp. vanilla
  10. 3/4 tsp. salt
  1. Mix the first three ingredients together ( flour, 4 tablespoons brown sugar, and 1 cup butter) until crumbly and press into a greased baking pan.
  2. Bake at 350 degrees for 15 minutes.
  3. In a large bowl, beat the eggs, then add the corn syrup, brown sugar, pecans, butter, vanilla, and salt.
  4. Mix well and pour over the baked crust.
  5. Return to the oven and bake for 25 minutes or until lightly browned.
