Even if we try to have a nice assortment of cheeses and crackers on hand, it is also nice to be able to offer a warm snack that is not only quick to make so you aren’t stuck in the kitchen for long. This recipe for Hasty Hots is just the quick recipe to whip up on those occasions when you want to offer something hot, especially on a cold day. With only four ingredients, you will be in and out of the kitchen in no time, and your guests will love these warm bites.

Note: Be sure to use real parmesan cheese, not the kind found in a can. It will make these treats so much tastier!

 

Hasty Hots

Ingredients
  1. 4 scallions, minced
  2. ½ cup grated Parmesan
  3. 6 TB mayonnaise
  4. Toast rounds – about 2 dozen slices cocktail rye or sliced baguette
Instructions
  1. Stir together scallions, cheese, and mayonnaise until well blended, adding more mayonnaise if necessary to make a firm spreading consistency
  2. Toast one side of bread
  3. Spread cheese mixture on untoasted side and broil about 6 inches below broiler unit until bubbly and lightly browned (about 3 minutes)
