Grilled Lime Tequila Shrimp

All you need are  a few spices, a fresh lime, and a little tequila (which you already have around if you like margaritas) to add some sunshine to a seafood supper. Two pounds of shrimp — be sure to shell them — are marinated in the spices and margarita ingredients for several hours, depending on how spicy you want them, before cooking. Although this is also a great summer barbecue recipe, it works just fine indoors on the stove top too. From Vermont’s Rabbit Hill Inn, a beautiful and restful destination summer or winter.

 

Grilled Lime Tequila Shrimp

Preparation of the Marinade (Yield 1 ½ cups)
  1. ¼ cup lime juice, fresh squeezed
  2. ¼ cup tequila
  3. ½ Tbls garlic
  4. 2 Tbls shallots
  5. 6 Tbls olive oil
  6. 1 Tbls Dijon mustard
  7. ¾ tsp fresh black pepper
  8. 2 Tbls minced cilantro
  9. 4 Tbls minced parsley
Instructions
  1. Combine all ingredients and incorporate well.
Preparation of the Shrimp
  1. 2 lbs large shrimp (deveined and shelled)
  2. In ziplock bag, soak in marinade for 2-3 hours (longer if possible).
  3. Remove shrimp from marinade and let drain for 2-3 minutes.
  4. Oil hot grill rack to prevent sticking (you can do this in a skillet too).
  5. Grill on both sides until done (3-5 minutes total).
