Tortilla Sundaes

We spent New Year’s Eve the way we prefer- at home.  We decided to make a menu of Mexican foods, as my husband had received a quesadilla maker in a work gift exchange.  So, we began our evening with some fresh fruit, espinaca, guacamole, and chips and planned on making our main dish later.

Our evening progressed, and a few hours and many games of cards later, I considered whether to make quesadillas.  However, I was still full from our munchies earlier.  Of course, my appetite isn’t always a good barometer for others, so I asked others, and the consensus was fairly similar.  There was the excitement of trying the quesadilla maker (yes, we are a wild and crazy family), but people weren’t overly hungry.

So, even though dinner consisted of a little fruit and a lot of chips and dips, why not offer a dessert to satisfy any feelings of hunger?  It seemed like a fun way to eat on New Year’s Eve.  Trying to keep with our Mexican theme, I decided to use some of our tortillas for the dessert.  While our daughters and a friend opted to have popcorn, so they could hang out upstairs, the boys, my husband, and I gave this creation a try.  Seeing that all four ice cream dishes were emptied fairly quickly, it seems that this was a good idea.

Tortilla Sundaes

Ingredients
  1. 2 flour tortillas
  2. 1 tsp. butter, melted
  3. sugar
  4. cinnamon
  5. vanilla ice cream
  6. caramel sauce
  7. chopped walnuts
  8. whipped cream
Instructions
  1. Preheat oven to 350. Place tortillas on a baking sheet, and brush the top of each with butter.
  2. Sprinkle sugar and cinnamon on top.
  3. Bake for 5-10 minutes, or until tortillas are golden brown and crunchy.
  4. Allow to cool for a minute or two. Cut each tortilla into fourths.
  5. Put two scoops of ice cream in a bowl.
  6. Top ice cream with caramel sauce, chopped nuts, and whipped cream.
  7. Push 2 tortilla wedges into sides of ice cream, and enjoy!
