Balsamic Roasted Veggies

For the second Tapas Night of 2010 I decided to give it a Greek theme.  My original plan was to serve lamb sausage.  However, when I checked the freezer I discovered that we had lamb sausage, but it was bulk sausage.  A scoop of sausage just isn’t as appealing as one that is served as a link or slice.  So, I decided to save the lamb sausage for a different meal.

Ski season has arrived in New Hampshire and with that comes weekly ski lessons.  Our older son participates in these lessons, and so to extend his time skiing, we offered to drive him and three friends every Friday.  Of course, driving four teens to skiing means that a parent needs to stay there.  My husband graciously has offered to be the transportation, which gives me Friday afternoon and evening alone with our eleven year old daughter, Sam.

Fabulous French Onion Soup

For our family Christmas celebration on Saturday, my husband made a beef roast.  Even though we had a dozen people for dinner, there was plenty of leftover beef.  So, what better to do in the winter than make soup?

For the kids I made a simple veggie-beef-noodle soup.  For us that sounded way too bland and boring.  And as their afternoons were filled with practices and they needed to eat earlier than us, it was the perfect reason to make two pots of soup.  With no wrinkled nose ingredients to avoid, the obvious choice was French onion soup.

Day 10- Overnight Eggnog Bread Pudding

If you’re a regular reader, you will note that the Day 10 post is a day late.  However, with a full day of Christmas celebrations yesterday, there wasn’t much time for editing photos and writing. Saturday was filled with Christmas excitement: opening presents, eating lots of delicious foods, and enjoying the company of family and friends.

Day 9- Maple Cinnamon Pecans & Almonds

As part of my holiday gift making, I decided to try a new recipe for flavoring almonds and pecans.  In the past, I have made Sweetly, Spiced Pecans, which have an egg white coating to hold the sugar and spices.  For this recipe I wanted to try a new coating and a different sweetener.

Maple syrup seemed like my best option as the main ingredient in the coating.  It would have dual purposes, acting as both the sweetener and the adhesive for other ingredients.  To give the nuts more diversified flavor, I decided to use cinnamon as the second ingredient…


Day 8- Tortilla Sundaes

We spent New Year’s Eve the way we prefer- at home.  We decided to make a menu of Mexican foods, as my husband had received a quesadilla maker in a work gift exchange.  So, we began our evening with some fresh fruit, espinaca, guacamole, and chips and planned on making our main dish later.

Day 7- Sugar Cookies

What would Christmas be without a batch of sugar cookies?  For me they are an important part of the holiday season.  I made numerous batches with my mom when I was a child and now make batches with my children.  I oversee a crew of four cookie makers, but luckily, everyone usually chooses to be harmonious during these times.  However, I have learned to divide when needed, such as having the boys cut out there half of the cookie dough and then have the girls cut out theirs.

Day 6- Spinach Squares

Today’s recipe is savory instead of sweet.  However, when these spinach squares are served, they disappear as quickly as a plate of freshly baked chocolate chip cookies.

I received this recipe from my mom, who was given it by her dear friend Jean.  Jean was quite the hostess who made wonderful dishes, and this recipe is no different.

The beautiful thing about this recipe is that it only requires one bowl for mixing and then bakes in a 13×9 pan.  The hardest part about making this snack is waiting for the squares to cool enough to be cut for serving.

Day 5- White Chocolate-Irish Cream Fudge

With the holiday season in full swing, it is the perfect time to make extra goodies. . .and give them to friends, teachers, etc.  Of course, I always leave some extras for the kids to enjoy but prefer to give my share to others.

I have made fudge as a gift several times and have found that it can be tricky.  Between watching the temperature and glossiness of the mixture for the exact moment at which it needs to be transferred from pot to pan, I have had a failed batch or two.  Timing is of essence.  A little too long…
