Chilled, Stuffed Tomatoes



A vegetarian main dish perfect for a hot summer night



  • 2 ears corn
  • 1 Tb. sugar
  • 2 tomatoes
  • 1 avocado
  • Salt & pepper
  • 1-2 tsp. dried basil


  1. Bring pot of water to boil.
  2. While heating, remove husk from corn.
  3. Add corn and sugar to boiling water. Remove from heat, and let stand
