With the week of vacation ending, a healthy diet is required. Too many mornings of full breakfasts and too many nights of large dinners have encouraged me to return to my usual healthy eating.
Never having been a person who is able to skip meals, I always eat breakfast. Sometimes it is simply a bowl of cereal, but quite often I crave something different. It needs to be something easy to make, filling, and not calorie-laden. A favorite choice of mine is a breakfast wrap.

Mom’s Wonderful Waffles

Recently, I reviewed my Toastmaster Belgian Waffle Maker. I received a comment to that posting requesting my waffle recipe. Here is the recipe that I have used for countless morning meals.
2 cups all-purpose flour
3 Tb. sugar
1 Tb. baking powder
1/4 tsp. salt
2 cups milk (I use skim)
2 eggs
3 Tb. unsalted butter, melted
1 tsp. vanilla
Heat waffle maker, per owner's manual.
In an 8-cup measuring cup, combine flour, sugar, baking powder, and salt. In a 4-cup measuring cup, whisk together milk, eggs, cooled melted butter, and vanilla. Make a well in the dry ingredients and add the wet ingredients. Stir until just moistened. (Batter will
