Baked Oatmeal

There’s a lot you can do with oatmeal besides just zapping it, sprinkling on a little sweetener, and eating it before you’re fully awake.  There’s even more to it than oatmeal cookies.

This recipe, which comes to us from the Barn Inn Bed and Breakfast in Millersburg, Ohio, combines all the best things about hot oatmeal and sweet oatmeal cookies. It’s a treat for any time of day — especially a cold winter day.

 

Baked Oatmeal

Ingredients
  1. 2 cups oatmeal
  2. 1 1/2 tsp. baking powder
  3. 1/2 tsp. salt
  4. 1 cup milk
  5. 2 eggs; beaten
  6. 1/2 cup chunky or regular applesauce
  7. 1/2 cup brown sugar
Topping
  1. 1 cup vanilla yogurt
  2. Your favorite fruit
Instructions
  1. Preheat oven to 325 F
  2. In a large bowl combine the oatmeal, baking powder and salt. Mix in milk,
  3. eggs, applesauce, brown sugar. Stir and pour into a greased casserole dish.
  4. Bake at 325 for 45 minutes. Serve hot, topping each serving with vanilla yogurt and fruit.
